Caribbean Johnny Cake Recipe

Caribbean Johnny Cakes -- very much unlike the traditional (and well-known) Rhode Island Johnny Cakes -- are a delicious fried snack which can be cut in half like a roll, tasty by themselves but also used for making sandwiches.

Here's one of many Caribbean Johnny Cake (Journey Cake) recipes:

Combine all the ingredients except the vegetable oil in a mixing bowl. Make a deep indentation in the dough and pour in the vegetable oil (2 tsp). Add the warm water slowly, then mix all ingredients ensuring that the mixture is no longer sticky. Knead dough until totally smooth (no lumps). Let dough stand in a covered container for 1/2 hour. 

Divide the dough into small pieces and form each into a ball in the palm of your hand. With a rolling pin, flatten the balls over a surface covered with flour.

Drop dough in fryer or onto a preheated skillet the surface of which is covered with oil. Move the Johnny Cake in the frying appliance for even cooking or allow a couple of minutes per side in frying pan until brown to taste.  Serve while hot.
